This lemon blueberry explosion loaf is kind of like a pound cake with extra pizzazz. I was pleasantly surprised by the level of sweetness, and the icing really made it special! I’m thinking I may have to recreate this one for our Christmas celebration—that is just how good it is! And I think it speaks volumes that Billy gave this a positive review, considering how he barely even likes blueberries. That’s one hell of a cake!
