This creamy butternut squash pasta dish is bright, flavorful, and polarizing. While the original recipe I found is supposed to be vegan, I chose to march to the beat of my own drum and go another route. You can follow in my footsteps, or miss out on protein: the choice is yours. I will say, the chicken breast came out surprisingly good, considering how little I did to it. And I would eat this again, though I’m not naive enough to attempt to make it on a Monday night ever again (or any other weeknight, for that matter).
