Peanut. Butter. Banana. Muffins. Need I say more? Don’t be fooled by how un-photogenic mine came out, okay? These muffins are the perfect bake-ahead breakfast option for busy mornings… or, if you’re like me and you snack throughout the day, then you’ll love these for your afternoon pick-me-up, too! There’s not a ton of sugar in them, but there IS plenty of flavor, and the chocolate chips—while optional—really do add a very nice touch. The oat flour probably serves some kind of nutritional purpose, but I can’t really speak to that. Anyway, bake a big batch of these on a Sunday, and I dare you to not have a great week!
